Boondi Raita



Aloo Palak

Plain Green Salad

Ingredients
1. Cucumber
2. Carrot
3. Cabbage
4. Spinach / Lettuce
5. Black salt
6. Black Pepper
7. Lemon
8. Onion.
9. Green chili.

Step
1. Fine cut small amount of cabbage.
2. Make circular pieces of cucumber and onion.
3. Cut carrot in small pieces.
4. Mix cabbage and carrot.
5. First put cucumber and onion in a plate.
6. Spread cabbage and carrot mix over it.
7. Spread lettuce on top of it.
8. Sprinkle lemon juice, black salt and black pepper on top of the salad.
9. Put green chillies on it.

Further Dressing
a) Feta cheese
b) Sprouts.
c) Tomato.
d) Cilantro sauce.
e) Mint and coriander leaves.

Savor this healthy recipe with taste.

Bored with Plain Steamed Rice

If you are bored with plain steamed rice and do not want to eat rice fried in butter or oil, Here is a simple solution.

Use
1.One or two flakes of cardamom.
2. Three or four cloves.
3. One cinnamon stick
4. Some green vegetables (peas, carrot usually)
5. A small teaspoonful Turmeric powder.

Add all these to rice before pressure cooking it. It gives a good alternative to plain rice and add flavor.

Fruit - Ice cream


A simple fruit dessert.

Ingredient
Any fruit act as an ingredient for this. I mainly use
1. Apple.
2. Grape.
3. pitch.
Some Dry fruits
4. Raisin
5. Date
6. Chuhara
Other
7. Ice cream (I prefer butterscotch or any chocolate flavor)
7. Milk
8.Chocolate

Step
1. Cut apple and pitch into small pieces.
2. Fine grain dry fruits.
3. Soak dry fruits for sometime in milk.
4. Add fruit pieces, grapes, few scoops of ice cream and small amount of chocolate to milk with dry fruits.
And your fruit ice cream is ready to be served with all love and affection.
If you have some savayya, then you can add few spoons of savayya to it.


Garbanzo Beans Salad

Gorbanzo beans / chick peas are well know for Chhole. I tried to get a salad out of it. I think it really comes nice.

Ingredients
1. Gorbanzo beans.
2. Baking soda.
3. Potato.
4. Onion.
5. Black Salt.
6. Yogurt.
7. Black pepper(grounded).
8. Red chilli powder.
9. Coriander leaves.
10.Lemon.
11. Chat masala.
12. Tamarind /Aamchoor / Grounded pomegranate.

Steps
1 Soak Gorbanzo beans in water with baking soda overnight.
2.Pressure cook soaked Gobanzo beans to make it soft.
3. Boil potatoes and crush it to make a paste out of it.
4. Fine cut an onion and coriander leaves.
5. Take a plate and arrange the ingredients as follows:
a) Mix potato paste and cooked Gorbanzo beans with some lemon juice. Make sure not to
crush beans.
b) Put it first in the plate.
c) Put a cover of yogurt over it.
d) Spread black salt over it as per taste.
e) Sprinkle some chat masala over it.
f) Spread fine cut coriander leave on top of it.
g) Assuming , you have arranged this dish in a circular manner, make 4 virtual quadrants on
top of it.
h) Dress each quadrant differently. Dress first quad with black pepper powder. Dress second quad with mix of black pepper and red chilli. Leave the remaining two quads as it is.

Further Dressing
i) Add tamarind or aamchoor powder or grounded pomegranate.
ii) Add green peas.

Server the salad and onion separately. People can add onion as per their taste later.

Khir

Khir is a sweet recipe cooked with Rice and Milk.
Khir with Cane Sugar
This is cooked similar to savayya as mention in previous post. Only changes are
1. Use water soaked Basmati / Sona masoori rice in place of roasted vermicelli noodles. Do not
roast rice.
2. Add shredded coconut while boiling milk along with other dry fruits.
3. Stir the mixture more often . Stirring is very heart to the cooking of khir.


Khir with Jaggery
This is the traditional way of cooking khir in India. Taste is certainly unbeatable.
Only difference from "Cooking Khir in Cane Sugar" are
a) Use Jaggery in place of cane sugar. Dissolve jaggery well in milk before adding it to the khir
in place of cane sugar.
b) Do not add cocount.
c) Continuous stirring is necessary.

You can server khir after freezing for some time or in a normal way.
Remember the principle .Server with love. It helps to nullify any shortcoming in your dish.

Savayya (vermicelli noodles)


Its a sweet dish made with milk and toasted vermicelli noodles.
The post describes the way I cook it.

Ingredients :
a) Vermicelli noodle.
b) Milk.
c) Cane Sugar.
d) Ghee / Butter / Edible Oil.
e) Cardamom.
f) Cashew nut.
g) Raisin.
h) Chuhara .

Steps:
Proportion of vermicelli and Milk is important. 1 liter of milk is only sufficient to cook less than 100gms of vermicelli depending on the thickness of milk u want in final recipe.

01. Roast the vermicelli till brown in Ghee or Butter or Oil.
02. Cut dry fruits(f,g,h) in small pieces. Can add different dry fruits depending on taste.
03. Boil milk with dry fruits pieces and 2-3 flakes of cardamom.
Easy way of stopping milk from spilling is to either keep it stirring or boil on light flame.
04. Even if boiling on light flame, stir milk periodically. You will find milk cream to stick on
sides of the container as milk boils further. Scratch these from sides and mix them well in
the milk. This cream finally adds taste to your recipe.
05. Let the milk boil till it start turning yellowish. This is the sign that a sufficient amount of
water has evaporated and milk has become somewhat thick.
You have Just finished with a milk recipe. You can just freeze this milk for sometime and serve cold after garnishing with peanut and almond.
06. Add roasted vermicelli.
07. Add cane sugar to taste.
08. Stir well and let the vermicelli cook in milk.
09. Further boiling will cook vermicelli noodle and make the milk thicker.
10. Stop boiling when vermicelli is cooked and mix is sufficiently thick.
Some people may like a thin mix than a thick one.

Love adds taste to food. Serve the sweet recipe with all love.
